Award-winning Monmouthshire-based charcuterie Trealy Farm has been elevating our pizzas to new heights at Glaslyn since 2019.
Established in 2004, Trealy Farm are pioneers of the 'British charcuterie renaissance', combining innovation with traditional artisan methods to create some of the finest charcuterie in the United Kingdom.
Dedicated to a 'slow movement' ethos, Trealy Farm exclusively works with ethically sourced British and wild meats, championing the highest welfare production methods by ensuring farmers get a fair price for their animals.
The Monmouthshire-based artisans offer a diverse range of over 40 different products, drawing on a range of British and continental traditions; from Salamis, Chorizos, Air-Dried Hams, Bresaolas and Pancettas, to Bacon, Boudin Noir, Hog’s Pudding and Pastrami.
Our signature ‘Yr Wyddfa’ pizza has been taken to the next level since adding Trealy’s Spicy Smoked Paprika Chorizo and their Spicy Sobrasada – a spreadable cured sausage - that has also been packing a punch to many more of our mountain-themed lineup and homemade specials.
Acknowledged today as one of the best artisan charcuteries in the UK, Trealy Farm stems from humble beginnings, inspired by founder James Swift’s childhood visits to his Grandmother’s farm in Northern France.
It was here that James began experimenting with charcuterie, travelling across Europe to learn different methods of curing, fermenting, smoking, and re-discovering ancient traditions that enliven recipes and add true authenticity to a wide range of culinary classics.
The Trealy Farm project has been driven by the traditional peasant concept of charcuterie as an everyday food and ingredient, utilizing every part of the pig to create something for all, and something affordable to all, much like pizza!
We’re proud to use Trealy Farm’s products on our menu at Glaslyn. It’s another opportunity to showcase to our customers the world-class produce coming out of Wales, and one that just so happens to pair perfectly with pizza!
